Agua de Horchata (Rice Water)

Makes 2-1/2 quarts

  • 1 cup rice
  • 1 cup honey
  • 1 teaspoon ground cinnamon
  • 2-1/2 quarts water

In small saucepan, add rice and 2 cups water. Cover and let boil. Turn heat low and let simmer until water has evaporated, approximately 10-15 minutes. The rice is now par cooked (cooked half way), but not soft. Add the rice in two or three batches into a blender with a little water. Puree completely. In the first batch of rice, add ground cinnamon and honey. Add additional water if necessary to blender if puree is too thick. Strain puree thru a fine mesh sieve and into a pitcher, adding water to help push rice mixture through. Add 2-1/2 quarts of water and mix. Taste and adjust for sweetness.

Serving Suggestion: Best if served chilled.
